It goes through 100% malolactic conversion. First sniff and I’m imagining honeyed yellow aromas, daffodils, ripe grapefruit, quince, lemon curd. Slippery, silky-soft and cool texture, crushed bitter herbs, a long yoghurty thread, ginger and that haunting, soft but dense flavour with refreshing wet stones rolling through and through.
