Syme on Yarra vineyard, fermented wild, 30% new oak, bottled unfined and unfiltered. 140 dozen made. This is meaty and reductive but it’s also grunty with tannin. It’s an excellent pinot noir. Black and red cherry, meat, peppercorn and garden herbs characters come whispered with chocolate and smoked cedar.
