What to expect - Super fresh vintage of 2015 creating a vivid and bright champagne - All Grand Cru fruit from Avize, Oiry, Chouilly, Cramant, Oger - Pair with a Prawn, mayo, lettuce roll with a brioche bun The 2015 Brut Blanc de Blancs is exclusively made from Chardonnays selected from the Grands Crus of the Côte des Blancs : Oiry, Chouilly, Cramant, Avize, Oger and Le Mesnil-sur-Oger.  Produced in limited quantities, this Cuvée has been aged for 6 years in cellar before being released onto the market. The wine undergoes a full malolactic-fermentation and Secondary fermentation takes place in bottle at 9°C in the deepest Pol Roger cellars (33 metres below street level) where the wine is kept until it undergoes remuage (riddling) by hand, a rarity in Champagne nowadays.  The very fine and persistent mousse for which Pol Roger is renowned owes much to these deep, cool and damp cellars. The first nose is expressive and powerful, offering up an array of fragrances blending lemon zest and pastry. Its creamy evolution creates a lovely, luscious character. The palate reveals buttery notes with hints of patisserie. Hazelnut liqueur and toasted overtones then gradually come through to complete this aromatic profile, which is imbued with a lovely tangy freshness. This is a rich, luscious champagne combining power and finesse. About the house If it is good enough for her Majesty the Queen to drink every evening, then this it is good enough for us. Pol Roger is one of the few champagne houses that have rightfully earned the British coat of arms to adorn every bottle and after all, it’s not just a favourite with the Royal Family but most of Britain, who know good champagne from the average. This medium-sized, family owned treasure of the Champagne region is the epitome of quality and consistency. With deep cool cellars, this maison leaves their cuvées ageing for far longer than most of their counterparts, allowing the development of very fine and tiny bubbles. This creates a silky texture on the palate with subtle toasty notes that are the hallmark of excellent champagne. If ever in doubt, buy Pol Roger. Food Suggestions This is a completely sublime champagne and I would up the ante of the indulgence by serving it with a lobster roll. Decadent but not too fussy!
