This is a new Tasmanian Producer that has just hit the market. Fresh and zesty with green apple fruits and nashi pears. A herbal influence of dried thyme and fennel that's intertwined with a floral note of jasmine makes for a nicely layered flavour spectrum which finishes with a lightly spiced, clean and lingering acid level.
