From two parcels in Savigny-lès-Beaune (clay and marl) and Échevronne (clay and limestone). Aged in used barrels (228L & 500L) on fine lees for 12 months, then settled in tank for 8 months. Not fined or filtered. Minimal SO2. Fresh nose with sliced apple and lime zest. Tightly wound so give it some air. Apple blossom and lemon barley emerge as it warms up. Spritely palate - zippy with beautiful high acidity that lingers. Green apple, lime, and a mineral core. Fresh and perky with plenty of drive and tension. Long ageing on lees gives a roundness to the wine, which becomes more apparent after the bottle has been open for a while. Ryan Larkin, Importer
