Le Timbre LateNightTales. Jasmine's notes: "Handpicked and wild fermented as always. A romantic and wild riesling from the Whitlands Plateau grown at 780masl on Jurassic basalt. De-stemmed and macerated on skins overnight, pressed and aged in barrel on full solids for 10 months. Racked by gravity and bottled in February 2020 with no additions. Unfiltered and unfined as always.

This is a single barrel that Jasmine couldn't blend with the rest of the Riesling, it was just too good to dilute. I waited about an hour to rip the top off and I have no regrets. Le Timbre LateNightTales offers a Champagne base like drink. Kensington Pride Mango, nutty, cola, floral, lime. The palate has a steely zing, with silken fruit, and a chalky, dry finish. It gets much better with time open, it will improve with time, drink it now for sheer pleasure or leave it for 7-15 for untold riches.
Le Timbre is made in a small shed surrounded by an acre of vines in Keilor, Melbourne Australia. Jasmine's style is wine with minimal additions, emphasizing purity of fruit, lively acidity and bright, ripe texture achieved by the use of oxygen and lees contact. Everything is wild fermented, unfiltered and unfined. The results are always stunning. Understated but somehow with a huge presence. And wines that I've always regretted not getting more of as I drink my last bottle.
