Bollinger's use of oak adds a wildness on the nose showing honey, walnut, cashew & loads of bread-like aromas that then flow onto the palate. There is a lively, crunchy acidity that ensures the palate is in no way flabby but this wine is taut, racy, balanced & lengthy.
