Pedro Parra was born in Concepción, Chile, near Bio Bio and Itata, and is raising his family there now. Pedro holds a PhD in terroir from the Paris Center of Agriculture, with six years’ experience in French terroirs. As a highly respected consultant, Pedro has worked for some of the greatest domaine on the planet including Comando G, Jean-Marc Roulot, Marco Marengo, Liger Belair, Altos las Hormigas, Chapter 24, and Zuccardi to name a few. Pedro brings an open mind and vision to winemakers and viticulturists alike. He has been described as the leading figure of the “New Chile” movement by the international press, in part because of his constant endeavor to bring a new vision to the Chilean wine industry, searching for quality terroirs and developing new plantings throughout the country.
Why do we like it?
Because this Cinsault is 100% dry-farmed from rocky granitic soils, fermented with indigenous yeast with 60% full cluster in concrete tank. I highly recommend that you decant this wine for 10 minutes before you serve it, it will get rid of the slight reductive notes. After that, you will be able to fully appreciate the wine for what it is. A very soft, delicate, red-fruited, fine wine. It feels very Old World. I like its salty, airy, tight character. I can't stop thinking of a Beaujolais cru. What jumps to mind is a steak tartare to pair with the lightness and juiciness of the wine.
