The grapes, sourced solely from organic and biodynamic farming, are hand-harvested and gently pressed in a pneumatic press for 5 to 8 hours, allowing their aromas to transfer naturally to the must. Fermentation occurs spontaneously, without added enzymes or selected yeasts, and without chaptalization.
