2023 Petrichor Wines Single Vineyard Pinot Noir 750ml

This wine is predominately Single Vineyard Pinot Noir, an expression of single clone hand picked on the 9th April . These are from 20-year-old vines grown on gravelly/volcanic terroir located in the Coal River Valley (Tea Tree). There is a small component of Biodynamic fruit from Petrichor vineyard in the wine.Handpicked at optimum fruit sugar/acid balance. The Pinot was de-stemmed retaining 20% whole bunches. Cold soaked for 6 days. Wild yeast, hand plunged with fermentation lasting 10 days.Basket pressed to older oak barriques (220L) and allowed to undergo MLF and mature in barrel for 11 months on fine lees.Gravity racked to tank for four months, then gravity fed hand bottling. Diam cork and wax seal.Minimal Sulphur addition. No fining. No filtration.
